RECIPE: A NOURISHING, VERSATILE PLANT-BASED STEW


Gav is joined by Sarah Ann Macklin to show you how to create this comforting, plant-based stew, filled with vibrant, gut-friendly vegetables and warming spices.  

Packed with protein-rich chickpeas, carrots, parsnips, sweet potato, and courgette, it’s the perfect winter dish to nourish both body and soul. Turmeric, paprika, and cumin add depth and anti-inflammatory benefits, while the recipe is fully adaptable - add extra greens to make it your own  

INGREDIENTS (serves 4)

  • 1 tbsp olive oil 

  • 1 onion, finely chopped 

  • 2 garlic cloves, minced 

  • 1 thumb-sized piece of ginger, grated 

  • 2 carrots, diced 

  • 1 parsnip, diced 

  • 1 sweet potato, peeled and diced 

  • 1 courgette, diced 

  • 1 can (400g) chickpeas, drained and rinsed 

  • 1 tsp cumin 

  • 1 tsp turmeric 

  • 1 tsp smoked paprika 

  • 1/4 tsp cinnamon 

  • 1/4 tsp chilli flakes (optional) 

  • 1 can (400g) chopped tomatoes 

  • 500ml vegetable stock 

  • 1 handful kale or spinach, roughly chopped 

  • Juice of 1/2 lemon 

  • Fresh parsley or coriander, for garnish 

  • Salt and pepper, to taste 

METHOD

1. Sauté the Aromatics: Heat the olive oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes. Stir in the garlic and ginger, cooking for another minute until fragrant. 

2. Add the Vegetables and Spices: Add the carrots, parsnip, sweet potato, and courgette. Sprinkle over the cumin, turmeric, smoked paprika, cinnamon, and chilli flakes (if using). Stir well, coating the vegetables in the spices. 

3. Simmer the Stew: Add the chopped tomatoes, vegetable stock, and chickpeas. Stir everything together, bring to a boil, then reduce the heat to a simmer. Cover and let cook for 20–25 minutes, or until the vegetables are tender. 

4. Add the Greens: Stir in the kale or spinach and let it wilt for a few minutes. Squeeze in the lemon juice and season with salt and pepper to taste. 

5. Serve and Enjoy: Ladle the stew into bowls and garnish with fresh parsley or coriander. Serve with crusty bread or brown rice for a satisfying meal.
